Veggie loaded Kale Thai Green Curry in 15mins
2 tbsp coconut oil
1tbsp chopped garlic and ginger
red onions - sauté 30sec
add your favourite veggies - aubergine, courgette, green beans, baby corn, mushrooms
High heat - mix
green chillies if you dare
Himalayan salt
100g green curry paste
mix in
1 tin coconut milk
mix mix - no need to cook for long so veggies stay crunchy and don’t become soggy
serve hot hot with brown rice
