Make a chicken rub out of paprika, thyme, salt and pepper
Cover chicken...
And rub in with hands
Ensuring you do both sides
Heat coconut oil in the instant pot
Add the whole chicken
Leave to simmer for c. 7 minutes
Make up chicken stock
Turn the chicken
Add the stock
Add two or three tbsp of lemon
Cover with garlic (lazy garlic used here)
Turn on the instant pot - using poultry setting, 25 mins on high with natural release
25 mins later... Perfect roast chicken
Remove to carve
