Add 3/4 cup of raw unsalted macadamia nuts to a food processor / blender & pulse until just chopped
Add 1 1/4 cup of fine unsweetened dried coconut 🥥 , 1/4 tsp sea salt 🧂, cayenne pepper & mix well
Scoop 1/4 cup of arrowroot powder into a separate bowl
Dip & coat each shrimp 🍤 in arrowroot powder, tapping off any excess powder
Dip the coated shrimp 🍤 in egg & water mixture. Then, coat with the coconut-macadamia mix
Arrange the shrimp 🍤 on a parchment-lined baking sheet
Bake in a 475°F oven until golden brown & cooked through (~8 minutes)
