start with a flat napkin and roll one side into the middle

turn around...

and roll the other side in

fold in half with the rolls outward and the scroll ends facing up

gently pull out the middle of the rolls so they're poking out

pinch together the two on the same side of the napkin with thumbs and fingers in one hand, the other two in the other hand

pull apart gently and voila! A chicken!
