To make a simple sugar syrup, you will need equal parts sugar and water and a large jug to mix it in.
Add 500g white sugar to the jug – you can use brown sugar as well, it just tastes slightly different.
Measure out 500ml of boiling water.
Add the water to the sugar.
Stir until the sugar dissolves and you get the right consistency. Add leftover fruits and spices to infuse them.
After about 10-15 minutes you should get a syrupy viscosity. Keep for up to 18 months in airtight container.
