How to make soft chocolate chip biscuits

Gather your ingredients: 170g soft butter, 150g dark sugar, 50g caster sugar, 1 egg, 250g flour, chocolate

Gather your equipment: scales, bowl, whisk, baking tray and parchment

Add soft butter to bowl

Add both sugars

Whisk to cream for 2 min

It should be soft and fluffy when ready

Add egg

Whisk to combine

Add flour

Add 2tsp cornflour, 1tsp bicarbonate soda, 1/2tsp salt

Stir to combine. It should form a stiff dough

Add up to 200g of chocolate chips and stir to combine

Wrap in cling film and place in fridge for minimum 1 hour

Preheat oven to 170oC towards end of chilling time

Remove from fridge. Take about 1tbsp of dough and roll into ball. Place on baking tray

Keep spread out on sheet. The recipe will make about two loads

Bake for 10minutes until the edges are slightly browned

The cookies should be very soft. Wait for few minutes then transfer to cooling rack
