Mix 1 cup (130g) flour, 3tsp (teaspoons) sugar, 1tsp baking powder, 1/4tsp baking soda & 1/2tsp salt in a bowl.
Add one egg and 1 & 1/4 cups (300ml) of buttermilk to a jug.
Melt 2 tablespoons (30g) of butter in the microwave, add to buttermilk mixture and mix well.
Add the wet ingredients to the dry ingredients and whisk until mixed thoroughly.
Melt a small amount of butter in a medium heat pan, pour in 1/3 cup (100ml) of batter mix.
When the bottom is golden brown, turn with a spatula and continue cooking. Push any spilt batter back into the pancake.
When the pancake is cooked through, transfer to a plate and serve with maple syrup.
