How to make Madeira cake

Gather your ingredients: 175g butter, 175g caster sugar, 3 eggs, 200g self raising flour, 50g ground almond

Preheat your oven to 170 oC

Add softened butter to your bowl

Add the sugar

Whisk with an electric whisk for 2-3 minutes

The mixture will become light and fluffy

Add your eggs one at a time and whisk till just combined between additions

Add your flavours: I chose 1tsp vanilla and zest of one orange. Mix to combine

Add your flour

Add the ground almonds. If you don’t want to use nuts then use 50g flour instead

Mix with a spoon to combine

You want a dropping consistency where it falls off the spoon - this mixture is too stiff

Add a splash of milk to loosen up the batter

Mix to combine

This is the right consistency as it falls off the spoon

Place greaseproof paper into your tin

Add the batter to your prepared tin and spread out to the corners with a spatula

Place in oven and bake for 20-25 minutes. The baking time will depend on the shape of your tin- a loaf tin takes 45 min

Insert a skewer at an angle in the middle of cake- it should come out clean

Flip over onto a cooking rack and peel off the greaseproof paper. Leave to cool and enjoy!
