How to cook quinoa so it's light and fluffy
Rinse 180g / 1 cup of quinoa thoroughly in a fine sieve, then drain.
Heat a small amount of olive oil in a pan on medium heat and add the drained quinoa.
Stir constantly for a couple of minutes until all the water has evaporated and the quinoa is lightly toasted.
Add 420ml / 1&3/4 cups of water and half a teaspoon of salt, stir and bring to a rolling boil.
Cover, turn heat down to the lowest setting and set a timer for 15 minutes.
When the timer has finished, remove from heat but leave the lid on. Leave to stand for five minutes.
Uncover - you should see spiral formations. Fluff up with a fork and serve.
