Measure 1 cup of dry green lentils - you don’t need to pre-soak them before cooking
Rinse well under cold water
Transfer to a large enough pan - the lentils will increase in size 2-3 times during cooking
Add 3 cups of water - don’t add salt or lentils will go tough
Bring to the boil on a high heat, stirring occasionally
When simmering, reduce to a low heat, cover & set a timer for 20 minutes
When the time is up, remove the lid & check - the lentils should be soft, but not squishy
If they’re still too firm, replace the lid & cook for a further 3 minutes
Check again, it still too firm cook for another couple of minutes
When cooked, drain any excess liquid & transfer to a dish
