Cream cheese icing

Making cream cheese icing

Mix cream cheese and butter together. Put a damp piece of kitchen paper under the bowl to stop it spinning.

Add vanilla extract and mix

Sift in icing sugar

Fold in the icing sugar or it will spray all over you and the kitchen

Mix away any lumps

Dollop on the centre of the cake

Spread from the centre with a spatula or back of a spoon

If the icing is sticky, dip your utensil in hot water

Keep adding icing to the centre. I like it when some icing drops down the sides.
